Sweet Italian Pasta Bake

I came across this new recipe on a child nutrition website. It was a big hit with my family. Very delicious and a new twist on a old favorite around here, (baked ziti).

1 pound of Barilla Rotini Pasta
3/4 pound of Sweet Italian Sausage (We used Johnsonville)
1 Sweet Red Peppers
1 Zucchini
1 Large Onion Diced
1 tablespoon of Olive Oil
1 jar of marinara sauce
2 cups Shredded Mozzarella Cheese

Heat oven to 350 degrees.
Cook pasta according to directions on the box
While pasta is cooking slice sausage into 1/2 inch slices. Saute sausage in olive oil over medium heat. Slice peppers, onions, and zucchini. When the sausage is near done throw in your veggies. Cook for another ten minutes until sausage is crispy and veggies are tender.

When pasta is done, drain and return back to boiling pot. Add sausage/veggie mixture, jar of sauce, and a cup of cheese. Mix together.

Move mixture to a casserole dish. Spread remaining cheese over the dish and place in your oven. Bake at 350 for 10 minutes. Remove from oven and let cool for 5 minutes.

Enjoy with bread sticks. Feeds about 5 people with some leftovers.

This meal is great and takes about 30 minutes to complete. The original recipe called for only the peppers and onions but by throwing in the zucchini you add more I think.
